PIADINA WITH WHOLE GRAIN TIMILIA (TUMMINIA) FLOUR - Antichi Granai

A few simple ingredients for a homemade meal that tastes even better!

INGREDIENTS for 4 PIADINE

200 g stone-ground whole grain Timilìa flour – Antichi granai

100 g "0" flour

30 g extra virgin olive oil

120 ml water

1 pinch of salt

This is a recipe truly accessible to everyone, especially if you don't feel like setting the table or cooking elaborate dishes, without resorting to pre-cooked meals or canned food forgotten in the pantry😉.

For this recipe, you don't need to be too precise, nor do you need complicated steps. Just a large, shallow bowl, a rolling pin, and good flour. Let's start!

PROCEDURE

In the bowl, I put all the ingredients, starting with the flours, then adding the room-temperature water a little at a time in a thin stream. Just to keep the absorption under control!

When the ingredients started to stick together, I turned the contents out onto a floured work surface and began kneading by hand for at least 10 minutes, paying attention to the consistency of the dough.

I let it rest for 30 minutes. Just enough time to choose and organize the ingredients for the filling!

After the resting time, I use a knife to cut it with a cross shape, which will yield 4 small balls for the 4 piadine.

I flatten them and roll them out one at a time with the rolling pin, without pressing too hard, using star-shaped movements (first in a cross, then in an "X"), adding Timilìa flour as needed to prevent the rolling pin from sticking.

Once ready, I cook them for a few minutes on both sides in a well-heated pan over medium heat.

There is no standard time because they don't all have the same thickness or weight, so I check every now and then to see if the bottom has changed color.

Ready to be filled, good to eat!
