The Company: Flavors of the Volcano
In this article, I would like to introduce you to Rosario and Rosita's farm, I Sapori del Vulcano, where they grow raspberries, blueberries, blackberries, red and white currants, gooseberries, strawberries, and wild strawberries.
I Sapori del Vulcano is a farm established in 2008 in Maletto, a municipality in the province of Catania, located within the Etna Park at 1,000 meters above sea level.
Production flourishes in an extremely fertile soil, rich in nutrients, as it originated from the crumbling of various types of lava of different ages and the mixture of ash, lapilli, and sand, which are typical eruptive materials from the Etna volcano.
The mineral salts released over time by the lava and the natural fertilizer created from the remains of plants buried by various volcanic eruptions give the fruit distinctive organoleptic properties that are unique throughout the country.
The company was founded out of a passion for berries and their beneficial properties, which can be found in both the fresh fruit and the jams.
These are produced using a special process of vacuum cooking at low temperatures, which avoids destroying the proteins and vitamins present in the fruit, while keeping its organoleptic properties and the taste of freshly picked fruit intact.
