Tea Leaves: Tradition and excellence from Dolceria Salemi since 1947.
The story of this biscuit runs parallel to that of its creator, Alfio Salemi, who moved to Catania in the early 1900s while still a child to learn the pastry trade at the renowned Swiss pastry shop, Caviezel.
After 25 years, having acquired significant professional training, Alfio Salemi decided it was time to set out on his own, and in 1947 he opened his own pastry shop in Zafferana Etnea, near Piazza Umberto.
It was precisely in those years that he created this extraordinary biscuit, initially used to add value to the taste and elegance of ice cream cups; its delicate and crunchy flavor, a triumph of eggs, almonds, and sugar, immediately won over the palates of local customers and vacationers alike.
Spanning three generations, from grandfather Alfio to mother Sara, and to grandsons Ignazio and Alfio, the Tea Leaves, in almond, pistachio, and hazelnut varieties, today represent the excellence of Dolceria Salemi.
