Appetizer: Bruschetta Duo
Ingredients:
- Bonuè Black Olive Pâté
- Bonuè Chili Pepper Pâté
- Loaf of bread to be sliced
- Bonuè Extra Virgin Olive Oil
Instructions:
To prepare the bruschetta duo, start with the bread: place the loaf on a cutting board and cut it into slices about 2-3 cm thick.
Afterward, line a baking sheet with parchment paper, arrange the slices of bread on it, and brush them with olive oil to coat evenly. At this point, place them in a preheated static oven at 220°C for 5 minutes, then switch to the grill setting and cook for another 2 minutes (if using a convection oven, bake at 200°C for 5 minutes and then set to grill for another 2 minutes). When the slices of bread are golden brown and lightly toasted, they are ready to be topped with the black olive pâté and the chili pepper pâté.

Fusilli with Pistachio Pesto
Ingredients:
- Monil Bronte Pistachio Pesto
- Monil Bronte Pistachio crumbs to taste
- Organic Ancient Sicilian Grain Fusilli
- Grana cheese to taste
- Bonuè Extra Virgin Olive Oil to taste
- 1/4 onion
- 200 g heavy cream
- 150 g diced pancetta
- 50 ml milk
- Salt to taste
Instructions:
Boil the pasta in salted water for the time indicated on the package.
Meanwhile, chop the onion and sauté it in a pan with a drizzle of extra virgin olive oil. Then, add the diced pancetta. Sauté until golden brown.
Now, add the pistachio pesto, milk, and heavy cream. Mix until everything is well combined and cook for 5 minutes. Finally, drain the fusilli, toss with the prepared sauce, and finish with a sprinkling of pistachio crumbs and Grana cheese.

Sicilian-Style Sweet and Sour Meatballs
Ingredients:
- 250 g ground meat (veal)
- 70 g breadcrumbs
- 1 egg
- 2 tablespoons grated Grana or Parmesan cheese
- 1 tablespoon chopped parsley
- 1 clove of garlic
- 4 yellow onions
- 3 tablespoons vinegar
- 1 tablespoon sugar
- Salt to taste
- 1 tablespoon Monil pine nuts
Instructions:
In a bowl, combine: the ground meat, breadcrumbs, egg, a pinch of salt, grated cheese, chopped parsley, and crushed garlic clove. Knead the ingredients until you get a soft, compact mixture that is easy to shape by hand. Form small meatballs and set them aside.
Next, peel the onions and cut them into thin rings.
Pour a drizzle of extra virgin olive oil into a pan and stew the onion rings over medium-low heat. Add salt and cover with a lid. Continue cooking for about 10 minutes until they soften. Add the prepared meatballs and pine nuts to the same pan. Stir gently and cook for about 10 minutes to allow the flavors to meld.
Separately, dissolve the sugar in the vinegar and then use the mixture to deglaze the pan.
Continue cooking the sweet and sour meatballs for another 5 minutes or so, until the meat is fully cooked. The onions, meanwhile, should become caramelized.

Valentine's Day Cookies
Ingredients:
- 250 g all-purpose flour
- 6 g baking powder
- 100 g sugar
- 1 vanilla bean
- 1 medium egg, at room temperature
- 125 g butter, at room temperature
- ½ lemon zest
- For the filling: "I Sapori del Vulcano" Strawberry Extra Jam to taste
- For dusting: powdered sugar to taste
Instructions:
Take the butter out of the refrigerator an hour before starting, cut it into small pieces, and let it soften at room temperature.
Place the flour on a work surface and add the butter and all the other ingredients in the center, including the seeds from the vanilla bean.
Work everything together very well until you get a smooth, homogeneous dough.
Wrap it in plastic wrap and let it rest for at least half an hour in a cool place.
Using a rolling pin, roll out a sheet no thicker than ½ cm and use a heart-shaped cutter to cut out an even number of shapes; remember that you will need two to form one cookie. At this point, on half of the hearts, cut out a smaller heart shape (5-6) in the center. Arrange all the hearts on a baking sheet lined with parchment paper and bake at 180°C for about 15-20 minutes.
The cookies should not darken, but just turn slightly golden; when they are baked and still hot, put some strawberry extra jam on the solid hearts and top them with the hearts with the cutout centers.
Dust with powdered sugar and… Happy Valentine's Day!
