Paccheri with Tuna, Capers, and Sun-Dried Tomatoes
What could be better with the arrival of the warm season than a lovely dish with tuna, capers, sun-dried tomatoes, and a sprinkling of Bronte pistachio crumble?

Ingredients:
- 400g Ancient Sicilian Grain Paccheri
- 100g Mare dell’Etna Tuna Buzzonaglia
- 50g Salina Capers from Az Agr. Murabito
- 10 Amore sun-dried tomatoes
- 1 garlic clove
- Extra virgin olive oil from Oleificio Costa
- Salt and pepper to taste
- Monil Bronte pistachio crumble
Method:
- Bring a pot of salted water to a boil and cook the Paccheri for the time indicated on the package, or until al dente.
- Meanwhile, heat a little extra virgin olive oil in a pan and add the garlic clove, cut in half. Sauté gently.
- Add the Salina capers and the sun-dried tomatoes cut into small pieces. Cook for a couple of minutes, then add the tuna buzzonaglia and mix well. Let it cook for a couple of minutes so that it heats through thoroughly.
- Drain the Paccheri and add them to the pan with the sauce. Sauté for a minute so they are well coated and flavorful.
- Serve the Paccheri hot, garnishing with a little pistachio crumble, some freshly ground black pepper, and a drizzle of extra virgin olive oil.
- Serve at the table with a glass of Monte Gorna white wine.
