In our tradition, Amaro Iddu is a true chameleon. If you serve it as a digestif, I advise against putting it in the freezer: sub-zero temperatures anesthetize the delicate olive aroma. Serve it cool, around 10-12°C. But my real advice is to try it as a summer aperitif: pour it into a large glass with plenty of ice, a generous splash of seltzer (or tonic water), and a slice of "verdello" lemon. The effervescence will make the wild fennel explode in all its balsamic freshness!
