The Botanical Essence of the Volcano: Notes of Prickly Pear, Citrus, and Thistle
On the slopes of the volcano, in the village of Belpasso, monastic history intertwines with local botany. Born from the intuition of sisters Francesca and Sara Piana, who rediscovered and enhanced an ancient 17th-century Benedictine recipe, this liqueur represents a liquid bridge between the past and contemporary craftsmanship. A project entirely "Made in Sicily" that captures the harsh and sweet soul of our territory, finally returned to its historic and traditional bottle.
Ingredient Analysis and Taste
- 🌱 Wild Thistle: Provides the characteristic bitter and deeply herbaceous note, rooted in the rural tradition of Eastern Sicily.
- 🌵 Red Prickly Pear from Etna: Adds roundness to the palate, a natural warm color, and a fruity sweetness that perfectly balances the bitterness of the herbs.
- 🍊 Bitter Orange: The island citrus par excellence, which cleanses the palate with a persistent freshness and releases intense essential oils.
- 🧑🍳 Slow Infusion (17th-century recipe): The separate artisanal processing of the botanicals allows for the extraction and preservation of the aromatic profile of each individual ingredient, creating a complex and layered olfactory bouquet.

In our Etna tradition, the most common mistake with complex artisanal bitters is serving them straight from the freezer. Extreme temperatures "close" the essential oils of the bitter orange and anesthetize the herbaceous notes of the thistle. I recommend serving it cool, at about 10-12°C, at most with a single cube of pure ice. For a perfect digestif, try it paired with classic almond cookies or pistachio brittle: the roundness of the nuts incredibly enhances the natural bitterness of the liqueur.
