The Golden Nectar of Sicilian Tradition

Born under the warm sun of Western Sicily, just 60 meters above sea level, this Malvasia brings to the glass all the energy of a territory dedicated to viticulture for millennia. The sea breeze and limestone soils forge a rich, fragrant grape, which is strictly hand-picked between late August and September. The uniqueness of this wine lies in its ancient production method: fermentation is gently interrupted by the addition of wine brandy. This crucial step "captures" the natural sugars of the grape, offering an intense, complex sip with an enveloping sweetness.

Ingredient Analysis and Taste

  • 🌱 Terroir of Origin: The vines grow on limestone soils at 60 m a.s.l. in Western Sicily. This proximity to the sea gives the grape a subtle savory note that perfectly balances the sugary structure.
  • 🧑🍳 Winery Technique: After manual harvest, vinification takes place in steel silos at a controlled temperature (12-15°C). Stopping fermentation with high-quality wine brandy crystallizes the residual sugar at 120 g/l, bringing the alcohol volume to 16%.
  • 🍯 Aromatic Profile: In the glass, it presents with a bright, luminous amber-yellow color. The nose is enveloping and dense: notes of candied orange peel explode, fused in a warm embrace of caramel and sweet spices.
  • 🌋 Tasting Experience: On the palate, it fulfills its olfactory promises. It is distinctly sweet, intense, and possesses a long persistence that recalls figs and dried fruit.

🍷 The Taste Ambassador recommends:

This Malvasia has a dual soul, played entirely on temperature. If you serve it at 16-18°C, it releases all the warmth of caramel and is perfect with our classic honey rice fritters or almond-based dry pastries. But the real trick is to try it chilled, at 10-12°C: at this temperature, the sweet spices and candied orange become sharp, making it an unusual and formidable aperitif, perhaps paired with a not-too-aged blue cheese.

Quick FAQs

How do I store it once the bottle is opened?

Thanks to its 16% alcohol content and residual sugars, this Malvasia keeps very well. You can store it in the refrigerator, tightly corked, for several weeks without it losing its aromatic profile.

What is the production difference compared to a classic passito?

While a passito concentrates sugars by drying the grapes, for this Malvasia, wine brandy is added during fermentation (fortification). This process stops the yeast, preserving the natural sweetness of the fresh must and enhancing aromas more related to caramel and sweet spices.
