The manual harvest between late August and September selects only the clusters at their peak aromatic concentration. Through careful vinification at controlled temperatures and a calibrated arrest of fermentation, the sugary and fragrant soul of the grape is preserved, delivering a warm, enveloping glass with a long aromatic memory.
