On the northern slopes of the Volcano, where the altitude of 700 meters ensures the temperature fluctuations essential for sparkling wine production, a successful oenological challenge comes to life: Emilio Sciacca's Bollamater. This Etna Spumante DOC represents a milestone, being the first Classic Method made entirely from Nerello Mascalese grapes (Blanc de Noir). A micro-craft production of just 600 bottles, it captures the mineral energy of Contrada Martinella in a fine and elegant perlage.

Ingredients and Taste Analysis

  • 🌋 Terroir and Altitude: Born on volcanic, sandy, mineral-rich soils in Linguaglossa (North Etna). The 700-meter altitude preserves the vital acidity necessary for a substantial Classic Method wine.
  • 🍇 Artisan Blanc de Noir: Gentle pneumatic pressing transforms the Nerello Mascalese (a red-berried grape variety) into a crystalline sparkling base, enhancing the structure without extracting color.
  • 🧑🍳 Indigenous Yeasts and Patience (36 months): Spontaneous fermentation with indigenous yeasts, followed by a long rest of at least 36 months in the bottle. No sterile filtration, only racking and natural decantation to respect the raw material.
  • 🍋 Mineral Tension and Sapidity: The glass (pale straw yellow) releases vertical notes of flint and graphite, enriched by an elegant floral bouquet and faint hints of bread crust. On the palate, it is tense, fresh, with thirst-quenching sapidity and a long floral finish.
