Four Centuries of Etna History in a Glass of Catarratto
In the shade of a century-old mulberry tree and a flowering wisteria in San Giovanni Montebello, the Baroni Scudero family has been passing down the art of winemaking since the 17th century. AliAde is the liquid expression of this precious heritage: a pure Catarratto that breathes the breezes of the Ionian Sea and draws from the deep minerality of the volcanic sands.
- 🌋 Volcanic Terroir and Very Low Yields: Born on predominantly sandy volcanic soils, with a yield strictly limited to just 5,000 kg/ha. This approach concentrates the aromas in the cluster and gives the wine a pronounced acidic and mineral vein (6.10 g/l).
- 🌱 Integrated Farming and Manual Harvest: 6,000 vines per hectare trained using the spurred cordon system, managed with integrated farming techniques, and strictly hand-harvested to preserve the total integrity of the fruit.
- 🧑🍳 "Sur Lie" Maturation and Bâtonnage: Vinified in steel, the wine rests in contact with the fine lees for 4 months, undergoing continuous bâtonnage (controlled stirring). This artisanal technique enriches the structure, imparting a velvety texture and significantly superior aromatic complexity.
- 🍷 Limited Artisanal Production: An exclusive, niche production of only 2,300 bottles, aged for a further 8 months in steel and 3 months in the bottle before being ready for tasting.

🍷 The Taste Ambassador recommends:
Extended aging on fine lees with constant bâtonnage gives this Catarratto a smoothness and volume on the palate unexpected for a white wine. I suggest not muting its aromas by serving it ice-cold: the ideal temperature is around 10-12°C. From experience, it is the ideal companion for a slice of swordfish alla ghiotta or medium-aged stretched-curd cheeses.

Quick FAQ
What does "bâtonnage" aging mean?
It is a traditional winemaking technique consisting of stirring the fine lees (natural spent yeasts) back into the maturing wine. This artisanal process imparts natural compounds to the AliAde Catarratto, increasing its structure, longevity, and softness on the palate.
Where does the label design come from?
The labels for the Scudero white wines are a tribute to their historic 17th-century farmhouse. The visual details are inspired by the ancient lava stone cistern, the century-old mulberry tree, and the wisteria that have shaded the family courtyards for 400 years, bearing witness to the age-old harvest ritual.
