In San Giovanni Montebello, in the shade of a majestic centuries-old mulberry tree and enveloped by the Ionian Sea breeze, the Scudero Barons have been passing down their ancient winemaking art for four centuries. Cantata is the liquid tribute to this 17th-century estate: a vibrant Sauvignon Blanc, hand-harvested, which draws its unmistakable aromatic elegance from the black volcanic sands of Mount Etna.

• 🌋 Lava Terroir and Minimal Yields: The roots run deep into soil of pure volcanic origin, predominantly sandy. The yield is strictly limited to 50 quintals per hectare to concentrate aromas in the grape, ensuring a vibrant acidity (5.92 g/l) impossible to replicate in commercial lowland production.
• 🌱 Integrated Agriculture: 6000 vines per hectare trained using the spurred cordon system, tended with integrated farming techniques with extremely low environmental impact to preserve the volcano's ecosystem.
• 🧑🍳 Bâtonnage and "Sur Lie" Maturation: It rests in steel in close contact with fine lees for 4 months, undergoing continuous bâtonnage (stirring).
