Pure Nerello Cappuccio: the volcano's rare elegance

Born from the constant wonder of those who cultivate vines on the southern slopes of Mount Etna, gazing at the sea shimmering on the horizon, comes Serafica Mirantur Rosso. A rare and precious expression that brings to the glass the truth of a vineyard cultivated in Nicolosi, in the Mompeluso district, at an altitude of 850 meters. Here, among volcanic sands with high drainage capacity, the roots of Nerello Cappuccio have been anchored for centuries, irradiated by the Sicilian sun but refreshed by the altitude. Among the very few pure interpretations of this variety, which is often used only in blends, Mirantur tells a story of an intense, complementary Sicily, rich in emotion and a "contiguous vision" between volcano and sea.

Ingredients and Taste Analysis

  • 🌱 The uniqueness of the grape: Vinified 100% pure (an oenological rarity on Etna), Nerello Cappuccio reveals itself in all its elegance. Sourced from vines trained with the spurred cordon system (5,200 plants/ha) with a controlled yield of 90 quintals/ha, it offers a less tannic and more aromatic profile than its "brother" Nerello Mascalese.
  • 🌋 High-Altitude Volcanic Maturity: Manual harvest in the second ten days of September, at 850m a.s.l., ensures grapes that are ripe yet possess a distinct mineral acidity, the fruit of the Mompeluso volcanic sand.
  • 🧑🍳 Respectful Vinification: Maceration on the skins lasts from 8 to 12 days, followed by soft pressing. Aging takes place exclusively in steel tanks to preserve the primary freshness of the volcanic fruit, followed by 3-6 months of bottle rest.
  • 🍒 Sensory Profile: Visually, it presents a vibrant ruby red color. On the nose, it is intense, with clear hints of cherry, raspberry, and wild strawberry. On the palate, it is dry, juicy, and joyful—delightful to the palate, with gentle, fresh tannins that offer great pleasure and balance. Alcohol content is moderate at 13% Vol.

And if you are bold, in the summer, drink it slightly cooler (12-14°C) with grilled blue fish dishes. It is surprising.
